Basil and Sun-Dried Tomato Dip

Ingredients:
6 sun-dried
tomato halves
1/2
cup boiling water
2
cups nonfat cottage cheese
1/4
cup thinly sliced scallions
1/4
cup chopped fresh basil
1
Tbsp. lemon juice
dash
of black pepper
Instructions:
In a small bowl, combine
the tomatoes and water. Let stand for 5 minutes to soften tomatoes. Drain
well and chop finely. Place the cottage cheese in a food processor or blender.
Add the tomatoes, scallions, basil, lemon juice, and pepper. Process or
blend until well mixed and somewhat smooth.
