Shocking Pink Limeade

 


Ingredients:
1  cup prickly pear juice* 
1/2  cup fresh key lime juice 
1/2  cup sugar
2  cups sparkling water, chilled 
1  lime, cut in wedges 

Instructions:
Place prickly pear juice, lime juice and sugar in a jar with a tight-fitting lid and shake vigorously to dissolve sugar. Pour over ice into 4 tall glasses and top off with sparkling water. Garnish with lime wedges and serve immediately.
To peel a prickly pear, hold in place with the tines of a fork while you slice off each end with a sharp knife. Cut a lengthwise slit down the fruit and peel skin off of flesh in a rolling motion. Juice and strain through a fine sieve (to eliminate seeds) before proceeding with recipe.
