Banana Banana Bread

 


Ingredients:

1 1/4 c unbleached flour
3 tbsps brown sugar; packed
1 1/2 tsps baking powder
1 tbsp pumpkin pie spice
1 c bananas; mashed
1/4 c skim milk
3 tbsps fat-free sour cream
1 egg white; whipped

Instructions:

Preheat oven to 350. Prepare six muffin pans with cooking spray and flour; set aside. 

Combine flour, sugar, baking powder, and pumpkin pie spice together in a bowl. In another bowl, combine bananas, milk, sour cream, and egg white. Combine dry ingredients with wet ingredients just until moistened. Fill muffin pans 2/3 full.
                 
Bake 20 minutes, or until light brown.
