c unbleached flour

tbsps brown sugar; packed

1/2 tsps baking powder

tbsp pumpkin pie spice

c bananas; mashed
1/4
c skim milk

tbsps fat-free sour cream

egg white; whipped
Instructions:
Preheat oven to 350. Prepare
six muffin pans with cooking spray and flour; set aside.
Combine flour, sugar, baking
powder, and pumpkin pie spice together in a bowl. In another bowl, combine
bananas, milk, sour cream, and egg white. Combine dry ingredients with
wet ingredients just until moistened. Fill muffin pans 2/3 full.
Bake 20 minutes, or until
light brown.
