Banana Cake

 

 
Ingredients:
2 cups flour (unbleached or whole wheat pastry) 
1 teaspoons baking soda 
1/2 teaspoon salt 
1 cup sugar or other sweetener 
1/4 cup oil 
4 ripe bananas, mashed (about 2cups) 
1/4 cup water 
1 teaspoon vanilla 
1/2 cup chopped walnuts (optional) 

Instructions
                  
Preheat oven to 350°. Mix the flour, soda, and salt together.
 
In a separate bowl, beat the sugar and oil together; then add the bananas and mash them. Stir in the water and vanilla and mix thoroughly. Add the flour mixture, along with the chopped walnuts, and stir to mix.

Spread into a greased 9-inch square pan, and bake at 350o for 45 to 50 minutes, until a toothpick inserted into the center comes out clean.
