Caraway Corn Bread

Ingredients:
1 cup all purpose flour
3/4 cup yellow cornmeal
1/3 cup sugar
1 Tbs. baking powder
1/2 tsp. salt
2 tsp. caraway seeds
1 large egg
1 cup milk
2 Tbs. unsalted butter, melted and cooled slightly
Instructions:
Preheat oven to 425°F. Generously grease an 8 inch
square baking pan. Stir together first 5 ingredients and half the caraway
seeds in a bowl. Whisk together remaining ingredients in another bowl.
Stir milk mixture into dry ingredients until just combined. Spread batter
in prepared pan and sprinkle with remaining caraway seeds. Bake 20 minutes
in middle of oven, or until sides begin to pull away from edges of pan.
Cool in pan on a rack 5 minutes and cut into squares.
