Cheddar Dinner Scones

 

 
Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons cold margarine
or butter (3/4 stick), cut into
small pieces
1 large egg
3/4 cup milk
4 ounces shredded extrasharp
Cheddar cheese (1 cup)

Instructions 
Preheat oven to 425 degrees F. Grease large cookie sheet.

Into large bowl, measure flour, sugar, baking powder, and salt. With fingertips, blend margarine or butter into mixture until it resembles fine crumbs.

In small bowl, lightly beat egg and milk. Stir egg mixture and Cheddar cheese into flour mixture just until ingredients are blended.

Turn dough onto lightly loured surface (dough will be sticky). Divide dough in half.
                           
With lightly floured hands, pat each dough half into a 5-inch round, about 1 inch high. Place rounds, about 3 inches apart, on cookie sheet. 

With floured knife, cut each round into 6 wedges, but do not separate wedges.

Bake scones 20 to 25 minutes until golden. 

Serve scones warm, or remove them to wire rack to cool completely. Reheat if desired.
