Herbed Rice Bread

 


Ingredients:
1  cup cold cooked white rice
1  tablespoon olive oil
1  cup cornmeal
1  tablespoon grated parmesan cheese
1  teaspoon baking powder
1  teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried mixed herbs
1  cup skim milk
1/4 cup fat free egg substitute
1/4 cup nonfat sour cream
 

Instructions:
Coat an 8"x8" baking dish with nonstick spray.
In a small bowl,mix the rice and oil. Use a fork or potato masher to lightly mash the rice.
In another small bowl,mix the cornmeal,parmesan,baking powder,onion powder,garlic powder and herbs.
In a large bowl, whisk together the milk,egg and sour cream.Add the cornmeal mixture and stir to combine. Fold in the rice.
Transfer the batter to the prepared baking dish. Bake at 400 degrees for 30 minutes, or until a cake tester in the center comes out clean.

Cooking Time: 30 minutes
