Ingredients:
1/4 cup plus
3 Tbsp. sugar, divided
1 Tbsp. margarine
6 apples, peeled
cored and sliced into 8 wedges each
1/3 cup toasted
almond slivers
2 Tbsp. cornstarch
1/2 tsp. cinnamon
2 tsp. grated
lemon zest
2/3 cup all
purpose flour
1/2 tsp. baking
powder
3 Tbsp. margarine,
melted
2 tsp. sugar
Instructions:
Combine 1/4
cup sugar and the 1 tablespoon of margarine in a heavy 10 inch skillet
(cast iron) over medium heat and stir until golden, about 5 minutes.
Combine apples,
almonds, cornstarch, cinnamon, and 1 teaspoon of the lemon zest.
Layer apple
mixture in skillet over the golden sugar, then top with 2 tablespoons of
sugar.
Combine flour,
baking powder, remaining 1 tablespoon sugar and remaining teaspoon of lemon
zest.
Combine the
3 tablespoons of melted margarine with the vinegar and add to the flour
mixture, stirring just until dry ingredients are moistened.
Shape into a
ball and place between sheets of plastic wrap and roll into a 10 1/2 inch
circle. Remove top sheet of plastic then invert the dough onto the apple
mixture, removing other sheet of plastic as you go, being careful not to
let plastic touch hot skillet.
Cut slits in
the dough to allow steam to escape.
Bake at 375*F
for 45 minutes or until crust is golden and apples are tender.
