Ingredients:
1/2 lb dried apricots (1-1/2 cups)
4-1/2 c water
4 T sugar
1 T cornstarch dissolved in 1 T cold water
Instructions:
Place apricots in a 2 quart saucepan and pour in cold
water. Bring to a boil over high heat, then reduce heat to low and simmer
uncovered for 15 minutes, or until the fruit is tender. Remove the fruit,
reserving the water. With the back of a large spoon, rub the fruit through
a sieve, set over a mixing bowl and stir in sugar. Return the puree to
the pan of water and bring to a boil over high heat. Reduce heat to moderate,
stir in cornstarch, and stirring constantly, cook another 2 - 3 minutes,
or until puree just reaches a boil and thickens slightly. Remove from heat
and cook to lukewarm. Pour into individual dessert dishes. Refrigerate
at least 4 hours before serving.
