Broiled Apricots With Almonds

 


Ingredients:
4 teaspoons brown sugar
1/4 teaspoon ground cardamom
8 plump fresh apricots, pitted and
   halved
4 teaspoons sliced almonds
2 cups low-fat frozen yogurt
 

Instructions:
Preheat the broiler in your oven. Combine the brown sugar and cardamom in a small bowl. Spread the apricot halves on a work surface, pit side up. Sprinkle with the sugar and spice mixture and top with the almonds. Set on a broiler pan and place about 6 inches from the heat source. Broil until the sugar bubbles and the almonds turn brown, 2 to 5 minutes depending on your broiler. Watch carefully the almonds can turn black and bitter in the wink of an eye.
Spoon the frozen yogurt into 4 small bowls and flatten with your spoon. Place the hot apricots on top and serve.
