Ingredients:
3 medium fresh D'Anjou pears,
about 1 1/2 pounds
2 cups water
2 tablespoons fresh lemon
juice
2 cups rose wine
1/2 cup sugar
3 pieces orange zest or
peel (1 x 2 inches each)
3 pieces lemon zest or peel
(1 x 2 inches each)
3 drops red food coloring
1 teaspoon fresh lemon juice
Instructions:
Peel pears with vegetable
peeler. Cut in half and remove core with melon baller.
In a medium bowl combine
water and 2 tablespoons lemon juice. Add pears. Set aside.
In a medium stainless or
enameled saucepan, combine wine and sugar.
Add zest, food coloring and
remaining 1 tablespoon lemon juice to syrup.
Bring to a boil. Remove pears
from lemon water and immerse them in wine mixture. Simmer,uncovered, over
medium heat 8 minutes, or until fruit is tender when pierced with a knife
tip.
Remove pears from syrup with
slotted spoon and set aside.
Discard strips of orange
and lemon zest. Continue to cook syrup over medium heat until reduced to
6 tablespoonfuls.
Cut each pear half in 1/8-inch
crosswise slices and fan out on a serving platter. Drizzle 2 teaspoons
syrup over each pear and discard remainder.
Serve warm or cover, refrigerate
and serve chilled.
