Ingredients:
1/2 Cup
Dark brown sugar
1/4 Cup
Light margarine
1 Lrg
Egg
4 tsp
Pure vanilla extract
2 Cups
Enriched white flour
1/3 Cup
Unsweetened cocoa powder
3/4 tsp
Baking powder
3/4 Cup
Cherry spreadable fruit or jam
1/2 Cup
Dried chopped cherries
1/2 Cup
Ground pecans
Instructions:
Line baking
sheet with parchment paper or wax paper and set aside. Pre-heat oven to
325 degrees.
In medium bowl,
cream together brown sugar, margarine and vanilla. Mix in egg. In
small bowl, combine flour, cocoa and baking powders. Stir in cherry spreadable
fruit, dried cherries and ground pecans.
Divide dough
into two equal portions.
On floured surface,
with well-floured hands, shape into two logs, and square off ends.
Transfer logs
to baking sheet. Bake for 25-30 minutes, or until firm and lightly browned.
Cool on wire
rack for 5-7 minutes. Using sharp, serrated knife cut logs on diagonal
into 1/2" slices.
Return slices
to baking sheet, leaving space around each slice. Continue to bake,
10-15 minutes, to desired crispness.
(Biscotti become
crisper as they cool, so err on the not-too-dry side. If needed, you can
re-crisp later by warming in oven for few minutes.)
Cool completely
on wire rack before serving.
Biscotti pick
up moisture easily, so store only in airtight container.
