Ingredients:

cup Formula 1 Dutch Chocolate
1/2
cup dark brown sugar
1/3
cup unsweetened cocoa powder
1 1/2 tablespoon
cornstarch or arrowroot (kudzu)
dash salt
2
cups of lowfat or nonfat milk
2
beaten eggs (in a large heat resistant bowl)
2
teaspoon vanilla extract*
Instructions:
In a medium saucepan heat
milk, brown sugar, cocoa, cornstarch and salt until it comes to a boil,
stirring constantly.
It should start to thicken
just before it boils. Boil for about a minute, and keep stirring.Remove
from heat and gradually stir into beaten eggs. If you add the hot pudding
too fast, it will cook the eggs and you will end up with chocolate syrup
and scrambled eggs!
Once about half of the pudding
mixture is added into the eggs, pour the egg and pudding mixture back into
your sauce pan and boil while stirring for another minute.
Remove from heat and pour
back into mixing bowl. Add vanilla and cool down to room temperature (about
a half hour or so in the fridge should do it). Using an electric mixer,
add Formula 1 in chocolate.
Divide into 8 equal size
dessert cups or small sealable containers. Chill and enjoy. *For a nice
variation, use orange extract, peppermint extract or rum (brandy?) extract
in place of the vanilla.
By adding extra cornstarch
you can make this a pie filling.
