Ingredients:
2
cups all purpose flour or 1 3/4 cups cake flour
1
teaspoon instant (dry) coffee
1/3
cup unsweetened cocoa powder
1
teaspoon baking soda
1/4
teaspoon salt
1
cup sugar
2
tablespoons canola oil
1
egg white
1
cup nonfat plain yogurt
2
teaspoons vanilla
1/4
cup fat-free hot fudge topping powdered sugar (optional)
Instructions
Preheat
the oven to 350 degrees. Lightly coat an 8-inch square pan with no-stick
vegetable oil spray.
Place
the flour, coffee, cocoa, baking soda, salt and sugar in a large bowl and
stir several times to mix.
Sift
the whole mixture twice, letting it fall back into the bowl.
In
a medium bowl, combine the oil, egg whites, yogurt, vanilla, and fudge
topping (if the syrup is thick, place in the microwave for 1 minute, or
long enough to melt it). Mix together completely.
Pour
the liquid ingredients over the dry ingredients and mix thoroughly with
a spatula to make sure that everything gets mixed together. Pour
the mixture into the pan. Bake for 30 to 35 minutes. Dust with
powdered sugar if desired.
