Chocolatey Pumpkin-Pecan Bars

 

Ingredients:

1/2  Cup  Soft (tub) canola margarine
1  Cup  Granulated white sugar
1/2  Cup  Light brown sugar
1  Cup  Steamed fresh pumpkin*
(cool completely before adding) or canned pure mashed pumpkin
2  Lrg.  Eggs
1  tsp.  Pure vamilla extract
2  Cups  Enriched white flour
1  tsp.  Baking powder
Dash  Salt
1  tsp.  Cinnamon
1/2  Cup  Chopped pecans (2 oz. pkg.)
3/4  Cup  Belgian chocolate chips (4 oz.)
Canola or olive oil cooking spray

Instructions:

Pre-heat oven to 350 degrees.  In medium-size  bowl, using back of large spoon, cream together margarine, white and brown sugars.

Then stir in cooled pumpkin, eggs and vanilla extract. 

Set aside.  In large bowl, sift together remaining dry ingredients (flour through chocolate chips), in order listed above. 

Slowly add pumpkin mixture, stirring gently until thoroughly mixed.  Lightly coat 8 x 10 inch baking dish with cooking oil spray.  

Place on middle shelf in oven, and bake for 35-40 minutes, or until toothpick inserted into middle
comes out clean.  Set pan on rack to cool.  

Cool completely before slicing and serving.
