Chocolate Walnut Biscotti

Ingredients:
1 cup unbleached flour
1/2 cup sugar
1/4 cup unsweetened cocoa
powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 egg white
1-1/2 teaspoons vanilla
2 ounces bittersweet chocolate,
chopped
1/4 cup chopped walnuts
Instructions:
Spread the walnuts on a
pie plate and bake at 400 degree's for 5 minutes, or until fragrant. Let
cool.
In a large bowl, combine
the flour, sugar, cocoa, baking powder, baking soda and salt. In a medium
bowl, whisk together the egg, egg white and vanilla. Add to the flour mixture
and stir until smooth. Stir in the chocolate and walnuts.
Coat an 11"x7" or a 9"x9"
baking pan with nonstick spray. Press the dough into the prepared pan.
Bake at 350 degree's for 25 minutes, or until firm. Immediately cut into
30 fingers. Cool before serving.
