Ingredients:
1-1/2 cups all-purpose flour
1-1/4 cups old fashioned
oats
3/4 cup flaked coconut
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine,
softened
1 cup sugar
1 cup packed light brown
sugar
1 egg
Instructions:
Preheat the oven to 375
degree's. Mix the flour, oats, coconut, baking powder, baking soda and
salt in a large mixer bowl. Combine the butter, sugar and brown sugar in
a large mixer bowl. Beat at high speed until light and fluffy, scraping
the bowl occasionally. Add the egg, beating until blended. Add the flour
mixture and mix well. Shape into balls. arrange 2 inches apart on an ungreased
cookie sheet. Flatten with a fork. Bake for 8 to 10 minutes or until light
brown. Cool on the cookie sheet for 2 minutes. Remove to a wire rack to
cool completely.
