Crunchy Oatmeal Wafers

 

Ingredients:

1 ½ cups rolled oats
¼ cup all-purpose flour
¼ cup whole wheat flour
¼ cup firmly packed brown sugar
½ teaspoon cinnamon
1/8 teaspoon salt
½ cup unsalted margarine, melted
1 Tablespoon maple syrup

Instructions:

Mix together the oats, flours, brown sugar, cinnamon and salt in a medium-sized bowl.

Add the melted margarine and maple syrup to the dry ingredients, mixing well.

Drop the dough by teaspoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake for 8 minutes or until lightly browned.

Remove the cookies from the oven and let them harden on the baking sheets for 2 minutes before transferring to wire racks to cool.
