Festive Layered Cranberry Jello

Ingredients:
2 cups whole fresh cranberries
1 20-oz. can crushed pineapple,
packe in juice (about 2 cups)
1 cup frozen raspberries,
no added sugar
2 Tbs. unflavored gelatin
1 cup raspberry juice concentrate
1 cup water
1 Tbs. fresh orange peel
Instructions:
Pour pineapple with juice
in glass container and microwave until liquid boils, about 3 minutes (this
inactivates the enzymes).
Place cranberries in food
processor and chop. Place raspberries in 2 quart glass serving bowl. With
slotted spoon, spoon pineapple into bowl, reserving hot juice. Dissolve
gelatin in hot juice. Place remaining ingredients in bowl, stir and place
in refrigerator to gel overnight or for several hours.
