Ingredients:
1 oz. unsweetened baking
chocolate
1 cup cake flour
3/4 cup unsweetened cocoa
powder
1/2 teaspoon salt
1 cup egg substitute
1-1/4 cup granulated sugar
3/4 cup dark corn syrup
3/4 cup unsweetened applesauce
1/4 cup canola oil
1 tablespoon vanilla extract
2 tablespoons lightly toasted
chopped nuts (optional)
Instructions:
Coat a 9" x 13" baking pan
with nonstick cooking spray. Preheat oven to 350°F. Melt chocolate
in a double boiler over hot water, or heat in a microwave oven until melted
(about 1 minute) and set aside.
Sift together cake flour,
cocoa and salt. Set aside.
In a large bowl beat egg
substitute with a whisk until foamy. Beat in sugar and corn syrup. Add
applesauce, oil and vanilla. Add the flour mixture to the egg mixture and
stir until blended.
Pour into prepared pan. Sprinkle
with nuts, if desired. (Nuts add fat).
Bake for 30-35 minutes or
until center springs back when touched.
Let cool in pan on a rack.
Cut into 28 squares.
