Lemon Poppy Seed Cake

 

Ingredients:   
1-1/4 cups all purpose flour  
2/3 cup sugar 
1/2 cup cornstarch 
1 Tbs. poppy seeds  
2-1/4 tsp. baking powder 
1 tsp. salt 
2 Tbs. unsalted butter 
1 cup skim milk 
2 tsp. lemon zest 
1-1/2 tsp. vanilla extract 
1 large egg  

Instructions: 
Preheat oven to 350°F. Grease and flour an 8 inch baking pan. Combine first 6 ingredients in a bowl. Using a fork, blend in butter until incorporated. Combine remaining ingredients in another bowl. Stir milk mixture into flour mixture until just blended. Pour batter into prepared pan. Bake 35 minutes, or until a tester comes out clean when inserted in center. Remove from pan and cool on a rack.
