Ingredients:
1 cup all purpose flour
1 cup sugar
1 tsp. baking soda
1 egg, lightly beaten
1/2 tsp. vanilla extract
1/2 cup walnuts, finely ground
10 ounces unsweetened crushed pineapple, with juice
2 cups lowfat vanilla yogurt
Instructions:
Preheat oven to 350°F. Mix together flour, sugar
and baking soda in a large mixing bowl. Add egg, vanilla, walnuts and pineapple.
Beat with an electric mixer until thoroughly combined. Pour into a buttered
and floured 9 inch baking pan. Bake 30 minutes or until a tester comes
out clean when inserted in center. Serve cake with a dollop of yogurt.
