Low-Fat Mint Chocolate Pudding

 

Ingredients:

1/2  Cup  Sugar
4  Tbsp  Unsweetened cocoa powder
3  Tbsp  Corn starch
1/4  tsp  Salt
2 1/4  Cups  Skim milk
1   Chocolate mint patty
1  tsp  Pure vanilla extract

Instructions:

In large glass bowl, combine sugar, cocoa powder, corn starch, and salt.  

Add 1/4 cup skim
milk and stir.  Add remaining 2 cups of skim milk.  Break up mint patty, and stir pieces
into milk mixture.  

Cook in microwave on high for 3 minutes.  Remove from microwave, and
stir well.  

Cook in microwave for another 2 minutes or until pudding is steaming hot and
thickened.   

Stir in vanilla.  Cover with plastic wrap, and chill for 1-2 hours or until
cold.  Serve chilled.
