Lemon Rings

 


Ingredients:
1-1/2 cups all-purpose flour
1/4 cup sugar
   grated zest of 1 lemon
6 tablespoons margarine, cut into
   small pieces
1 large egg 
1 egg white, beaten lightly
 

Instructions:
Preheat oven to 375 degree's.
Prepare a cookie sheet with nonstick spray. Using a food processor fitted with a steel blade, combine all ingredients except egg white. Flatten dough slightly; cover in a plastic wrap. Chill 30 minutes.
Break off a tablespoon of dough; roll out to form a 3" pencil-shaped rope. Attach edges to shape a ring. Place on prepared cookie sheet. Continue with remaining dough. Brush tops of cookies with lightly beaten egg white. Bake 10 to 12 minutes or until lightly golden.
Remove cookies from baking sheet and cool on a wire rack. Store in a tightly covered tin.
