Maple Poached Pineapple

 

Ingredients:  
1/4 cup pure maple syrup, more for serving  
3 Tbs. rum (optional) 
1 lb. pineapple chunks 
1/2 cup plain lowfat yogurt  

Instructions: 
Combine maple syrup and rum in a heavy non-reactive saucepan over medium high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and simmer another 2-3 minutes or until pineapple is tender. Serve poached pineapple with maple syrup and yogurt.
