Maple Pear Crunch
Ingredients:
1/3 cup maple syrup
1 Tbs. lemon juice
4 large ripe firm pears, cored and thinly sliced
1/2 cup all purpose flour
3 Tbs. yellow cornmeal
3 Tbs. brown sugar, packed
1/8 tsp. cinnamon
1/4 cup unsalted butter, chilled and cut into small pieces
Instructions:
Preheat oven to 375°F. Combine maple syrup and lemon
juice in a heavy non-reactive saucepan. Cook over low heat 5 minutes or
until very hot. Remove from heat. Stir in pear slices and transfer to a
buttered baking dish. Set aside. Combine next 4 ingredients in a food processor
or bowl. Add butter and cut into dry ingredients until mixture resembles
coarse meal. Sprinkle topping over pears and bake 40 minutes or until bubbly
and golden.
