Melon In Mint Sauce

 

Ingredients:      
2/3 cup lowfat sour cream 
1 Tbs. plus 1 tsp. mint, minced 
1 Tbs. plus 1 tsp. sugar 
1/8 tsp. cardamom 
2/3 cup cantaloupe, cubed 
2/3 cup honeydew melon, cubed 
2/3 cup watermelon, cubed  

Instructions: 
Combine the first 4 ingredients in a small bowl and mix well. Add to the melon, toss lightly, and chill for several hours before serving.

Makes 4 servings
