Peach & Strawberry Crisp

 

Ingredients:   
6 C fresh peaches, peeled and sliced (about 3 pounds) 
3 C fresh strawberries, sliced 
3 T cornstarch 
1 tsp cinnamon 
1 C frozen unsweetened apple juice concentrate, thawed 
1/4 tsp almond extract 
1 C granola

Instructions: 
1.Combine first four ingredients in a large bowl, tossing gently to coat. Spread mixture int a 7"x11" baking dish that has been sprayed with nonstick vegetable coating  
2.Combine apple juice concentrate and almond extract; pour over the top the peach and strawberry mixture. 
3.Sprinkle the granola evenly over the top of the fruit. 
4.Bake at 375o for 25 to 30 minutes, or until bubbly.
