Brown Sugar Glazed Pineapple

 

Ingredients:
8 slices peeled and cored fresh pineapple, each 3/8  inch thick 
3 tablespoons unsalted butter, cut up  
8 tablespoons light or dark brown sugar 
8 tablespoons shredded sweetened coconut 
Ice cream or sorbet, for serving (optional) 

 Instructions:
With the oven door ajar, preheat the broiler 
In a small saucepan or in the microwave, melt the 3 tablespoons butter. Meanwhile, arrange the 8 pineapple rings on a cookie sheet with sides; brush tops with melted butter. Sprinkle the pineapple evenly with the 8 tablespoons brown sugar.  Place the cookie sheet under the broiler, about 3 inches from the heat. Pay close attention and when the sugar begins to bubble, about 4 to 5 minutes, remove the pineapple from the oven and sprinkle on the 8 tablespoons coconut.  Run the cookie sheet back under the broiler and broil until the coconut is golden, about 30 seconds to 1 minute. To serve, place 2 pineapple slices on each serving plate and serve as is or with ice cream or sorbet, if desired.
