Pear And RaspBerry Clafouti

Ingredients:
1 can (29 ounces) pear halves packed
in juice, drained and chopped
3/4 cup rolled oats
1 cup skim milk
1/2 cup fat-free egg substitute
2 tablespoons vanilla
1 tablespoon honey
1 teaspoon grated lemon rind
1/2 cup raspberries
1/4 teaspoon ground cinnamon
Instructions:
Coat a deep-dish 9" pie
plate with no-stick spray. spread the pears in the dish in an even layer.
Place the oats in a blender.
Cover and process on high for 1 minute, or until finely chopped. Add the
milk, eggs, vanilla, honey and lemon rind. Process until well blended,
stopping occasionally to scrape down the sides of the container.
Gently pour the batter over
the pears. Sprinkle with the raspberries and cinnamon. Bake at 350 degree's
for 35 minutes, or until puffed and cooked through. Cool slightly.
