Ingredients:

cup carrots, grated
1/4
tsp ground cloves
1
cup raisins
1
3/4 cups water
1/4
cup dates
1/2
cup honey
1
tsp baking soda
1
tsp cinnamon
1/2
cup bran
1
tsp allspice
1/2
cup chopped walnuts (optional)
1/2
tsp nutmeg
Instructions:
Cook carrots, raisins, dates,
honey and spices in water for in a sauce pan for 10 minutes over medium
flame. Let cool.
Mix and sift together flour
and baking soda, add bran and walnuts, if used. Add to carrot mixture and
mix well.
Pour into a lightly oiled
loaf pan, or 9 x 9 inch baking dish. Bake at 325 or 45 minutes.
