Smooth Strawberry Pudding

 

Ingredients:
2 ounces unflavored gelatin (2 envelopes)
1/2 cup cold water
1 cup skim milk
3 tablespoons honey
1 1/2 teaspoons vanilla extract
4 cups frozen unsweetened strawberries, thawed
8 mint leaves (optional)

Instructions:
1. In a medium size saucepan, sprinkle gelatin over water. Set aside for 5 minutes to soften. Add skim milk and honey and heat over medium heat, stirring constantly, until gelatin dissolves.
2. Remove from heat and stir in vanilla.
3. In a food processor, puree strawberries. Add gelatin mix and process until just blended.
4. Divide among 8 dessert glasses and chill until set. Decorate with mint leaves before serving.
