Single Serve Coconut Custard

 

Ingredients:
1/3 cup egg white
1/3 cup nonfat milk
1/2 teaspoon vanilla
Sweet 'n Low, 3 packets
1 tablespoon coconut flakes

Instructions

1. In a one-cup size microwavable bowl, combine all ingredients.
2. Microwave on lowest power setting for 30 minutes (for 1250W oven). Because microwave ovens vary, you may need to experiment with the time to get the custard to set up without curdling.
3. Let stand for 5 minutes.
