Strawberry-Rhubarb Crisp

 

Ingredients: 
3-1/2 Tbs. all purpose flour 
1/4 cup sugar 
1/8 tsp. nutmeg 
1 Tbs. plus 1 tsp. unsalted butter, chilled and cut into small pieces 
3-1/2 Tbs. Jarlsberg cheese, shredded 
2 cups rhubarb, sliced, thawed if frozen 
2 cups strawberries, sliced, thawed if frozen 
1 Tbs. plus 1 tsp. orange juice concentrate, thawed 
2 tsp. honey 

Instructions:
Preheat oven to 375°F. Combine flour, half the sugar, and nutmeg in a food processor or bowl. Cut in butter until mixture resembles coarse meal. Stir in cheese and set aside. Combine remaining ingredients in a mixing bowl and transfer to a baking pan. Sprinkle flour mixture over fruit and bake 35 minutes or until lightly browned.
