Ingredients:
1 cup fresh orange sections
1 cup fresh grapefruit sections
2 medium red apples
2 tablespoons dry sherry
(optional)
1 teaspoon fresh lemon juice
Sugar substitute equivalent
to 2 teaspoons sugar
1/3 cup sliced banana
2 tablespoons shredded coconut
3 maraschino cherries, drained
Instructions:
Cut orange sections in half,
grapefruit sections into quarters, and apples into small bite-sized cubes.
Core but do not pare apples. Mix these fruits with sherry, lemon juice,
and sugar substitute.
Cover and chill 1 hour or
longer. Just before serving, add banana; mix well. Spoon into six individual
desert dishes. Scatter coconut on top of fruits. Slice maraschino cherries;
place a few slices on top of coconut.
