Vanilla Custard Slice

 


Ingredients: 

1 X 200g packet Sao biscuits
1 cup sugar
¾ cup custard powder
1 L So Good Now soy drink
2 tsp vanilla
1 cup icing sugar
1 passionfruit, pulp only
1 tsp boiling water

Instructions: 
      
Line the base of a 19cm x 29cm slab tin with Sao biscuits.

Place sugar and custard powder in a large saucepan. Gradually add So Good Now and vanilla essence, stirring until smooth.

Place over medium heat and stir mixture continuously until mixture boils, then simmer for 1 minute (or microwave on HIGH [100%] for 7½ minutes, stirring after every minute).

Spread custard immediately over the biscuits.

Press remaining biscuits firmly over the top. Refrigerate until cold.

Combine icing ingredients (icing sugar, passionfruit, water). Spread over top of biscuits.
