Vanilla Ice Cream With Sauteed Pears

 

Ingredients:
1 Tbs. unsalted butter 
1/4 cup plus 2 Tbs. brown sugar 
4 ripe firm pears, cored and sliced lengthwise 
1/2 tsp. cinnamon 
3 Tbs. lime juice 
1/4 cup plus 2 Tbs. dark rum 
2 cups vanilla ice cream  

Instructions: 
Melt butter with brown sugar in a heavy nonstick skillet over medium heat. Sauté pears and cinnamon 4-5 minutes or until pears begin to soften. Stir in lime juice and rum. When liquid starts to simmer, keeping face and body away from skillet, ignite quickly with a lit match. When flames subside, remove from heat. Serve with ice cream.
