Strawberry Cake

 


Ingredients:
1 (2-layer) package white cake mix 
1/2 cup water
1/2 cup vegetable oil
3 eggs
1 (3-ounce) package strawberry gelatin dessert
1/2 cup mashed fresh strawberries
1 tablespoon all-purpose flour
8 ounces frozen whipped topping, thawed
1 1/2 cups sliced fresh strawberries
  Sprigs of fresh mint (optional)

Instructions:
Preheat the oven to 350 degrees F. Combine the cake mix, water and oil in a large mixer bowl. Beat until blended. Add the eggs 1 at a time, beating well after each addition. Mix the gelatin, mashed strawberries and flour in a small mixing bowl. Add to the cake mix mixture and mix well. Spoon into a greased and floured 9 x 13-inch cake pan. Bake for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack.

Spread with the whipped topping. Serve immediately or store, covered, in the refrigerator until just before serving time. Top each serving with sliced fresh strawberries and mint sprigs just before serving.
