Barley Mushroom Casserole

 

Ingredients:

4  Tbsp  Extra virgin olive oil
3  Cloves  Garlic, minced
1  Large  Onion, chopped
1  Med  Red bell pepper, chopped
1  lb  Mushrooms, sliced thin
1  Cup  Barley, quick
1/2  Tbsp  Dried basil
3  Cups  Vegetable broth
1/3  Cup  Low-fat cheddar cheese
Salt and pepper, to taste
 
Instructions:

Pre-heat oven to 350.

In large saucepan, heat olive oil over medium heat.  

Add garlic, onions, and red pepper.
 

Sauté 8-10 minutes or until onion is carmelized.  

Add sliced mushrooms, and sauté for 5 minutes.  

Add barley and basil.  Cook for 2 minutes, stirring constantly.  

Add vegetable stock, and simmer for 10 minutes.  

Remove from heat, and pour into baking dish.  

Bake in oven for 45 minutes.  

Remove from heat.  

Serve topped  with cheese, salt and pepper.
