Brown Rice With Zucchini

 

Ingredients:
1 cup long grain brown rice
1 cup vegetable stock
1-1/2 cups water
2 tsp. unsalted butter
3/4 lb. zucchini, cut into 1/4 inch slices 

Instructions:
Combine all ingredients, except zucchini, in a heavy saucepan over high heat. Season with salt and pepper to taste. Bring to a boil and immediately reduce heat to low. Cover and simmer 40 minutes. Add zucchini without stirring. Cover and simmer another 10 minutes or until rice is tender and liquid is absorbed. Fluff with a fork before serving.
