Ingredients:

cup brown rice
2
cups vegetable broth
1
package frozen peas 16 ounce
1
chopped red bell pepper
1
medium chopped onion
3
cloves garlic, crushed
1
tablespoon olive oil
Instructions:
Heat the oil in a non-stick
skillet. Sauté onions and garlic for 3-5 minutes.
Add the brown rice and vegetable
broth. Bring to a boil and boil for 5 minutes.
Turn down the heat, cover
the pan and simmer for 40 minutes .
Check the level of liquid
occasionally and add extra if necessary. Boil the peas and chopped peppers
for 3 minutes and add the rice mixture.
Mix thoroughly. Goes well
with chicken or a bean dish.
