Mexican Fried Rice

 

Ingredients:

2 tablespoons acceptable vegetable oil
1 cup uncooked rice
1 clove garlic, minced
1/2 cup finely sliced green onion
2/3 cup chopped canned chili peppers
1/2 cup diced fresh tomatoes
2 cups homemade chicken broth or low-sodium chicken broth

Instructions:

Heat oil in a heavy skillet over medium-high heat. 

Add rice and saute, stirring constantly, until golden brown. 

Add remaining ingredients. Cover and simmer 30 minutes, or until rice is tender and liquid is absorbed.
